Fish is the main element in this island's cuisine, along with diverse stews, like potaje, puchero and rancho con papas.

The fish can be fried, stewed or grilled and is usually accompanied by papas arrugadas, which are small potatoes boiled in salt water. Typical sauces are mojo rojo and mojo verde, made from vinegar, olive oil, garlic, salt, spices and … a secret ingredient depending on the cook.

Other typical ingredients of the local cuisine are rabbit and chivo (goat’s kid).

The famous quesadillas are sweets made from cheese. Local cheese is produced mainly in the central quesera and it has become one of the islands leading exports, on par with the local wine produced by the El Grifo wine co-op. Bars also serve strong traditional wines which are still produced by artisans using traditional wine presses.
