Logically, our most popular foods come from the ocean. Among the favorite fish are vieja, sama, bocinegro, salema, cherne and mero. Different types of tuna that are abundant along the coasts are also highly favoured. Caballas, sardines and chicharros are among the most consumed fish as well. Morena is also well known and is usually fried. These fish are usually prepared stewed, grilled, salted, etc. Fish is commonly accompanied by mojo (a typical Canarian sauce made with garlic, parsely, olive oil and cayenne pepper) and papas arrugadas (small potatoes boiled in saltwater). Local cheese, wine and gofio (stone ground flour made from roasted cereal) are also popular in the Canary Islands.
